Winemakers notes
100% Cabernet Franc. Fouquet is certfied-biodynamic. Like for the other Filliatreau reds, the hand-harvested bunches are destemmed and fermented spontaneously in stainless steel tanks with a maceration of around 20 days. The wine is aged in steel tank for about 10 months, before bottling with a light, non-sterile filtration.
